Chunky Vegetable Soup

Very filling and good in the winter. May need more stock if you want it runnier.

Ingredients

carrot, sliced

onion, diced
1/2
garlic clove, crushed

potatoes, diced

celery stick, sliced

chestnut mushrooms, quartered

cans of chopped tomatoes
300
ml vegetable stock
1
bay leaf
1/2
tsp dried mixed herbs

sweetcorn

cabbage, shredded
Directions
1.
Put the carrots, onion, garlic, potatoes, celery, mushrooms, tomatoes and stock into a large saucepan. Stir in the bay leaf and herbs. Bring to the boil, then reduce the heat, cover and simmer for 25 minutes.

Add the sweetcorn and cabbage and return to the boil. Reduce the heat, cover and simmer for 5 minutes, or until the vegetables are tender. Remove and discard the bay leaf.
3.
Ladle into bowls, serve and enjoy!
