Other Minestrone Soup

This is another minestrone recipe. Just as nice but from a different cookbook. May need extra stock if you want.

Ingredients
olive oil
1
garlic clove, chopped
1
red onion, chopped

parma ham, sliced
1/2
red pepper, deseeded and chopped
1/2
orange pepper, deseeded and chopped
200
canned chopped tomatoes
500
ml vegetable stock
1/2
celery stick, chopped
200
canned borlotti beans
50
cabbage, shredded
40
frozen peas
1/2
tbsp p parsley, chopped
40
dried vermicelli
cheddar, grated
Directions
1.
Heat the oil in a large saucepan. Add the garlic, onions and parma ham and cook for 3 minutes until slightly softened.
2.
Add the red and orange peppers and the chopped tomatoes and cook for a further 2 minutes. Stir in the stock and then add the celery.
3.
Add the borlotti beans along with the peas, cabbage and parsley. Bring to the boil and then lower the heat and simmer for 30 minutes.
4.
Add the vermicelli to the pan. Cook for a further 10-12 minutes.
5.
Ladle into serving bowls, garnish with the grated cheddar and then serve and enjoy!
