Cauliflower Soup

Sounds plain but it's actually quite tasty.

Ingredients
olive oil

butter
1/2
onion, coarsely chopped
1
leek, sliced
1/2
large cauliflower
450
ml vegetable stock
grated cheddar
Directions
1.
Heat the oil and butter in a large saucepan and fry the onion and leek for 10 minutes, stirring frequently.
2.
Cut the cauliflower into florets and cut the stalk into small pieces. Add the pan and sauté for 2-3 minutes.
3.
Add the stock and bring to the boil. Cover and simmer for 20 minutes.
4.
Turn off the heat and blend until smooth. Reheat until warm.
5.
Serve with a handful of grated cheese on top and enjoy!
