Cashew Bella Cheese

A cashew "mozzarella" - style cheese that is just divine, quick and easy to make! Cook it thoroughly and consume as a ball of cheese, or leave it creamy to add to your risotto, carbonara or anything you want! :)

gr raw cashew nuts
200
ml water

tbsp nutritional yeast

tbsp wheat starch or tapioca starch

tsp apple cider vinegar

good pinch of salt
1
small pinch of dry garlic
1
few cubes of ice (optional)
Directions

First you'll need to soak the cashews with boiling water for 20 minutes, or alternatively boil them for 5 minutes.

Add the water and cashews to a blender and blitz until smooth. Add the remaining ingredients, except for the ice. Blitz very well.

Put a saucepan on high heat and beside it - a bowl of ice cold water, preferably with 4-5 cubes of ice in it. Add the mixture to the saucepan, while preparing to stir quickly with a spoon as it thickens. As the water evaporates you'll have a gooey sticky mixture. While careful not to burn it, simply transfer it to the icy water for a few moments, then take it out and store in the fridge for up to 4 days.

Alternatively, you can stop the cooking at any time and skip the icy water bit for occasions when you need a "cheesy" sauce to add to a meal.
