Bacon Pudding

A family favourite, so good! Amazing with crispy roast potatoes and beans.

Prep
Cook
Serves 2people
Ingredients
1
oz suet
2
ozs bacon
5
ozs plain flour
water
Directions
1.
Chop bacon, then put in a bowl with the flour and suet, add enough water to bring the mixture together. A dryer mixture I find is better as the oil will be released from the bacon. It is very much a dumpling mixture, but with added bacon.
2.
Depending what bacon you use, you may need more/ less flour.
3.
Put the mixture in a heat proof bowl, cover with foil loosely as it can sometimes expand. Then steam gently for as long as possible. Keep an eye on the water so it does not dry out. I normally do a good 6 hours. It can be microwaved, but never tastes the same.
4.
If it looks oily when cooked, the oil can be drained off.
