Breakfast Frognuts

That's a recipe which dates back from my grandma, and her grandma, and probably her grandma... As it has Balkan roots, it's based on eggs and yoghurt. I however adapted it to the vegan diet and it tastes even better! The original name of the dish is "Danube Mekitsi" - which means "Danube Donuts". I however called it Frognuts, because the donuts tend to look like little frogs. Enjoy with honey, jam, fruity yoghurt or whatever you prefer! P.S. I am frying it, but you are welcome to air-fry or bake it as a healthier option, it tastes no less great!

Serves 2people
tbsp flax seeds
gr vegan yoghurt
gr flour
tbsp soda bicarbonate or baking soda
pinch of salt
vegetable oil to fry
It fries best in a saucepan or wok
For prep : Make your flax "egg" in a small cup. Let it sit for 10 minutes.
Sift the flour into a mixing bowl and add a pinch of salt. Heat the oil in a wok (medium heat)
In another (smaller) bowl pour the yoghurt and add the soda to it, while stirring. Set aside.
Add the flax mixture to the yoghurt
Add the wet mixture to the flour and whisk. By this time the frying oil should be ready so just grab a table spoon and dip it into the oil so nothing will stick to it, then use it to scoop from the mixture and drop into the oil. Fry the frognuts until golden on each side and serve immediately!
