Basic Pancakes

This is our favorite go-to recipe for pancakes. We double and triple it whenever we make it, and sometimes we add blueberries to the batter.

Ingredients

cup flour
1 1/2
tbsp sugar
1 1/4
tsp baking powder
1/4
tsp baking soda
1/4
tsp salt
1
cup milk
1
large egg
3
tbsp oil
Directions
1.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the milk, egg, and oil; blend well.

Pour the liquid ingredients over the dry ingredients. Whisk together until everything is combined (even if batter is still a bit lumpy). The batter will bubble and become spongy.
4.
Preheat griddle or non-stick pan to medium heat.

Spoon 1/4 c batter onto griddle for each pancake, allowing space for spreading. When the undersides of the pancakes are golden and the tops are lightly speckled with bubbles that pop and stay open, flip the pancakes with a wide spatula and cook until the other sides are golden.
