Butternut Squash Kugel

This is a family favorite that can be made crustless. However, we usually like to pour the batter into graham cracker crusts to make it into a pie.

Ingredients

lb butternut squash
1/2
cup oil
1/2
cup almond milk

tbsp flour
1/2
tsp cinnamon
1/8
tsp ground cloves
1/4
tsp nutmeg
1/3
cup sugar
3
eggs
Directions
1.
Wash butternut squash and pierce with fork or knife in several places. Bake at 375 until soft through and through (approximately 2-3 hours).
2.
Cut open squash and scoop flesh into the bowl of an electric mixer. Add remaining ingredients and beat well.
3.
Pour into 10-inch round pan, or baked pie crust, and bake for approximately 1 hour, until a toothpick stuck in the center comes out clean.
