Succulent Lamb Shanks

These lamb shanks become so tender and flavorful; they are a yom tov favorite that everyone in our family loves!

Ingredients

lamb shanks

tbsp oil
1
onion, chopped
3
large carrots, chopped
garlic, to taste
1/2
cup wine
1
can (15 oz) diced tomatoes
Directions
1.
Heat oil in skillet over medium-high heat. Working in batches, cook shanks until brown on all sides. Transfer shanks to plate.
2.
Add onions, carrot, and garlic to pot and saute for approximately 10 minutes. Stir in remaining ingredients. Return shanks to pot, pressing down to submerge. Bring to a boil, then reduce heat to medium-low. Cover, and simmer until meat is tender, approximately 2 hours, turning once midway.
