Simple White Cake

This is a super quick and easy basic cake. I sometimes add chocolate chips to make chocolate chip cupcakes for a not-so-healthy snack.

Ingredients

cup white sugar
1/2
cup oil

eggs

tsp vanilla extract

cups flour
1 3/4
tsp baking powder
1/2
cup almond milk
Directions
1.
Preheat oven to 350. Grease a 10-in round pan or line a cupcake pan with paper liners.

In a medium bowl, cream together the sugar and oil. Beat in the eggs, one at a time, then stir in the vanilla.
3.
Combine the flour and baking powder in a separate bowl. Add gradually to the batter, alternating with almond milk. Pour or spoon batter into the prepared pan.
4.
Bake for 30-40 minutes in the preheated oven. For cupcakes, bake for 20-25 minutes. Cake is done when it springs back to the touch.
