Walnut, Pear And Crispy Bacon Salad

It's a bit weird having pear in this, but it does work well.

Ingredients

bacon rashers

walnut halves, chopped

pear, cored and chunked
1 1/2
tbsps lemon juice

watercress, tough stalks removed
1 1/2
tbsps olive oil
1/4
tsp honey
Directions
1.
Preheat the grill to high. Place the bacon on the grill pan and grill for 3-4 minutes, turning once, until crisp. Set aside to cool and then cut into little pieces.
2.
Meanwhile, lightly toast the walnuts in a dry frying pan for a couple of minutes.
3.
Toss the pears in 1/2 tbsp of the lemon juice. Put the pears, watercress, walnuts and bacon into a salad bowl.
4.
Mix the olive oil, rest of the lemon juice and honey in a bowl, whisking until smooth. Pour over the salad and toss well to combine.
5.
Serve and enjoy!
