Hoisin Pork With Ribbon Salad

This salad takes a while but the flavours are worth it.

Ingredients

pork
1 1/2
tbsps hoisin sauce
90
carrots
1/4
cucumber
2
spring onions, finely shredded
2
radishes, very thinly sliced
sesame seeds
1
tbsp p sesame oil
1
tbsp p rice vinegar
Directions
1.
Slice the pork into 2 pieces and place in a shallow dish. Pour over the sauce, cover and leave to marinate at room temperature for 1 hour.

Preheat the oven to gas mark 5.
3.
Place the pork on a wire rack set over a roasting tin that is half-filled with water. Roast for 35-40 minutes until the pork is cooked through. Cool for 10 minutes.
4.
Use a potato peeler to peel the carrots and cucumber into thin ribbons. Place in a bowl and toss together with the spring onions, radishes and a sprinkling of sesame seeds.
5.
Put the sesame oil and vinegar into a bowl and mix well. Pour half into the salad and mix.
6.
Slice the pork and place onto serving plates. Put some of the salad on the side and then drizzle with the rest of the dressing.
7.
Serve and enjoy!
