Pork And Cucumber Salad

This salad takes a while but OMG is it good! This made me discover peanuts in a salad and now I'm obsessed with them.

Ingredients

pork
3
spring onions, halved lengthways and sliced into 3

cucumber

handfuls of shredded lettuce

coriander leaves

mint leaves

tbps dry-roasted peanuts, lightly crushed

lime, zested
1/2
tsp salt
1/2
tsp sugar
1
tsp sesame oil
1/2
tbsp b groundnut oil
1/2
red chilli, deseeded and finely chopped
2
tbsps sugar (separate from the other sugar)
1 1/2
tbsps fish sauce
2
tbsps lime juice
2
tbsps rice vinegar
Directions
1.
Thinly slice the pork diagonally. Cut each slice in half lengthways. Put in a bowl with the spring onions.
2.
Peel the cucumber, halve lengthways and scoop out the seeds. Thinly slice diagonally and place in another bowl.

To make the marinade, use pestle and mortar to pound the chilli and the sugar (the 2 tbsps) to a watery red paste. Add the fish sauce, lime juice and rice vinegar, stirring to dissolve the sugar. Pour half over the pork and onions and half over the cucumber. Leave to marinate for an hour.

Put the leave, coriander and mint in a bowl and mix. Pour the cucumber and the cucumber marinade into the bowl and mix in, along with the lime zest, salt and sugar.
5.
Drain the pork and discard the marinade. Heat a wok and then add the oils and the pork. Stir-fry for 5 minutes until cooked through and slightly caramelised. Mix the pork in with the rest of the salad and the peanuts.
6.
Serve and enjoy!
