Very Veggie Risotto

This is very easy to make and stupidly good for you.

Ingredients
1
large onion, finely chopped
1
red pepper, finely chopped
1
clove of garlic, crushed
handful of mushrooms, sliced
handful of spinach, shredded
handful of watercress, shredded

(60 gr) arborio rice
1
vegetable stock cube
cheddar, grated
1
tbsp p olive oil
zest and juice of 1 lemon
1
glass of white wine

boiling water
Directions
1.
Heat the olive oil in a pan and cook for about 2 minutes. Add in the garlic, onion, lemon zest, pepper and mushrooms. Stir well and cook for 1 minute.

Add in the rice and stir thoroughly, making sure all of the rice is coated in oil.
3.
Add the stock cube to the boiling water and stir until the cube has dissolved. Pour the stock into the pan and stir. Add in the wine.
4.
Bring to simmering point and leave to simmer for about 20 minutes until the water has reduced.
5.
Add the lemon juice, spinach and cress and stir through.
6.
Serve, sprinkle with the cheddar and enjoy!
