Depression Cake 1935 By Carrol Emory

“Here is the recipe my mom used to bake when I was little. We sometimes called it the "eggless, milkless, sugarless cake”  even though it did have brown sugar in it….How I loved this cake!!” This recipe is from Carol’s mom’s “mother Blanche Irene Westervelt Higgs who lived through the depression and had to ‘make do’. I remember coming home from school to the smell of this delicious ‘depression’ cake hot from the oven with a glass of milk waiting on the table!…Makes my mouth water even today…what a lucky girl I was!!!”

Ingredients
Filling

cup brown sugar…firmly packed
1 1/4
cups water
1/3
cup shortening or lard
2/3
cup raisins
2
tsp cinnamon
1/2
tsp powdered cloves
Cake
1
tsp salt
1
tsp baking soda
2
tsp water
2
cups sifted flour
1
tsp baking powder
Directions
1.
Broil brown sugar, water, shortening or lard, raisins and spices for 3 minutes…..let COOL.
2.
Add salt and baking soda which has been dissolved in 2 tsp water.
3.
Gradually add the flour and baking powder which have been sifted together, beating smooth after each addition.
4.
Bake in greased and floured 8x8x1 1/2 pan at 350° for 30 minutes or until done.
