Spanish Chorizo Soup

Love this warming soup for the winter - the kids do too.

Ingredients

tbsp olive oil
1
onion, chopped
2
cloves of garlic, crushed
1
cup parsley, chopped
1
tsp cumin
1
tsp marjoram or oregano
1
tsp tumeric
dash of dried chilli flakes
1
x 810g can crushed tomatoes
1
x 400 g can butter beans, drained and rinsed
1
cup dried red lentils
6
cups chicken or veg stock
2
spanish chorizo sausages, cut into quarters
extra chopped parsley for garnish
Directions
1.
Heat oil in a large stock pot. Saute onion, garlic, parsley for appx. 5 minutes. Add spices and allow to cook for another few minutes. Pour in tomatoes, beans, lentils and stock. Cover and simmer for 30 minutes. Add chorizo and simmer for another 10 minutes. Check flavour and adjust with S&P if necessary. Serve hot with a garnish of parsley.
