New Orleans Red Beans & Rice

An all time cajun favorite straight from the crescent city!

Ingredients
1
lb dried red kidney beans (or substitute 3 large cans)
7
cups water
1
green capsicum, chopped
1
medium onion, chopped
3
celery stalks, chopped
3
garlic cloves, chopped
1/2
lb andouille sausage (or substitute chorizo), quartered then sliced
3
tbsp cajun seasoning
hot cooked rice
green onions, sliced for garnish
Directions
1.
Heat oil in large pot. Add capsicum, onion, celery and garlic to pot. Saute until soft. Add sausage and cook until mostly done.
2.
Add seasoning, and water and beans. Simmer for 2 1/2 to 3 hours.
3.
Serve over hot rice.
