Mama & Papa Ryan's Roast

This goes back to my childhood, where this was always my entire family's favorite meal. It's a Southern thing...

Ingredients

eye of round beef roast
s&p to taste
2-3
tsp flour
1/2
cup veg oil (enough to have about 1 cm oil in pot)
1
head of garlic, peeled
water
Directions
1.
Heat oil in heavy dutch oven (hint: oil is ready when a pinch of flour bubbles on contact).

While oil is heating, pat the roast dry with paper towels. S&P the roast and rub a thin layer of flour over. Using tongs, sear meat in the hot oil on all sides. It helps to move the meat around a bit to keep it from sticking. While browning, add a few tablespoons flour (one at a time) to the oil to make a roux for the the gravy.

When the meat is browned, lift and insert rack underneath. Stir water into the roux. Turn the heat to med-low. Cover and cook at least 2 to 2 1/2 hours, adding water if necessary.

During the final 30 minutes of cooking, add garlic. When meat is done, remove to a serving platter and tent to rest for 20 minutes.

We always served with hot rice and buttered carrots. Yum!
