Cheddar Potato Beer Soup With Shredded Ham
If you've never had beer in your soup - then it's time to get on the band wagon! Not surprising that this soup fills you up! Hearty and a definite crowd pleaser!
Heat butter in large, heavy saucepan over med heat. Add carrots, potatoes and onion, stirring until lightly browned (10 minutes). Add salt and season with black pepper and red pepper flakes. Add beer and heat to boil, stirring to scrape up browned bits. Add chicken broth, heat to boil. Cook until potatoes and carrots are tender, about 12 min.

Puree and return to saucepan. Stir in cheese and heat, stirring until cheese is melted (about 2 min). Taste for seasoning.
