Three Cheese Lasagne

Oh my. I'll never stop making this recipe. It's a family treat every time. Cheesy deliciousness.

Ingredients
for sauce

tbsp olive oil

cups onion, chopped

cups carrots, peeled and finely chopped

tbsp garlic, minced

gr lean beef mince

gr mild/sweet italian style, casings removed

cans (28 oz) crushed tomatoes

cup tomato paste
1/2
cup fresh basil, chopped

tsp brown sugar
2
tbsp dried oregano
2
bay leaves
1/4
crushed red pepper
for lasagne

lasagne noodles

container marscapone cheese
2
container light ricotta cheese
1 1/2
cups parmesan cheese, shredded
1
(10 oz) chopped frozen spinach
2
large eggs
4 3/4
cups mozzarella cheese
Directions

For sauce:

Heat oil in a heavy, large saucepan over med. heat. Add onion, carrots and garlic. Saute until softened, about 12 min. Add beef and sausages to pan. Saute until cooked through, breaking up meat with back of spoon, about 5 min. Add remaining ingredients. Cover and simmer until flavours blend and sauce measures about 10 C, stirring occasionally, about 15 min. Discard bay leaf. Cool.

For Lasagne:

Preheat oven to 350.

Combine ricotta and marscapone cheese with parmesan. Mix in spinach. Season to taste with S&P. Mix in eggs.

Layer in sprayed baking dish 2x in this order:

noodles
9.
cream
10.
cheese
11.
top with parmesan
12.
Cover tightly with foil. Bake for 40 minutes; uncover and bake until hot and bubbly - about another 40 minutes.
