Stuffed Mushrooms

Ingredients
4
slices bacon
3/2
lb mushrooms
1
tbsp butter
1/4
cup onion -- finely chopped
1
garlic glove -- finely chopped
1/3
cup sweet red pepper -- finely chopped
1/2
cup cheddar cheese - shredded
1
tbsp dried parsley
Directions
1.
Cook bacon until crisp. Remove from skillet, chop, and drain off fat
2.
preheat oven to 350 degrees F
3.
Remove stems from mushrooms. Discard 1/3 of stems. Chop finely what remains.
4.
Cook mushroom caps in boiling water for 1 minute. Rinse with cold water and drain on paper towel.
5.
Heat butter and add mushroom stems, onion, and garlic. Cook for 5 minutes.
6.
Cool first, then stir in bacon, cheese, and parsley.
7.
Spoon in caps, transfer to baking sheet, and bake for 10 minutes
