Madeleines With Lavender And Honey

A favorite recipe my sister, a culinary major, has successfully mastered and passed on to me.

Ingredients
6 3/4
oz granulated sugar
7 1/4
oz all-purpose flour
1
tsp baking powder
1
pinch salt
1 3/4
oz honey
4
eggs
1 1/2
tsp dried lavender
7 1/4
oz butter melted
This recipe may not be suitable to beginners. Must have Madeleine molds.
Directions
1.
Butter and flour the Madeleine molds. If they are Teflon just use food spray.
2.
Mix all of the dry ingredients together
3.
Stir in the eggs and honey. Do not overwork the mixture or excessive air will be incorporated.
4.
After the butter is melted, add the lavender to the hot butter and let it infuse a couple of minutes before stirring it into the base. Do not strain the butter.
5.
Chill the batter until firm
6.
Pipe the Madeleines into the prepared molds.
7.
Bake the Madeleines at 400 degrees Fahrenheit with the fan on high for 5 to 7 minutes, or until they spring back to the touch.
8.
Unmold the Madeleine immediately upon removing from the oven
