Coconut Poached Fish

Sounded awkward to me, but when my friend Jule raved about it, I had to try it. Now it's made it to my favourites book! Super easy, quick, delicious, and healthy.

Ingredients
400
ml coconut cream
grated zest and juice of 1 lemon
1
tbsp fish sauce
1
tbsp brown sugar
2
tsp sambal oelek
1
garlic clove, crushed
4
x 120g firm white fish fillets
1
cup baby spinach leaves
steamed rice to serve
green onions and red chilli for garnish
Directions
1.
In a large frying pan, combine 400 ml coconut cream, lemon zest and juice, fish sauce, brown sugar, sambal oelek and garlic. Bring to a boil on high, stirring.
2.
Reduce heat to low and add fish. Simmer gently, covered for 8-10 minutes until fish flakes easily when tested with a fork.
3.
Remove fish and stir through the spinach leaves. Serve on steamed rice, drizzled with sauce and topped with spinach, green onions and chilli.
