Best Ever Pimiento Cheese

Ok, so I can't actually get pimientos in Australia, but this recipe is too good to forget on a technicality. I substitute diced grilled red capsicum (from a jar) and it works just fine.

Ingredients
2
cups mild cheddar cheese, shredded
2
cups white, sharp cheddar cheese, shredded
1
can (7 oz) pimientos (or red capsicum, if necessary)
1
cup green onions
1/2
cup lite mayo
2
tsp lemon juice
garlic to taste, minced
2
tbsp worcestershire sauce
tobasco to taste
black pepper to taste
Directions
1.
Combine cheeses in bowl and add pimiento juice.
2.
Dice pimientos and chop green onions and add to cheese mix.
3.
Combine mayo, lemon and garlic and add to mix.
4.
Add worcestershire, tobasco and pepper and blend well. Serve at room temperature as a spread for crackers and veggies or on a sandwich. It's best if it's chilled for at least an hour before bringing back to room temperature for serving.
