Caramel Apple Pie

I used to make this recipe every Thanksgiving. I think it came from Real Simple originally. Absolutely brilliant, although I've always found the topping difficult.

Ingredients
pastry for base crust

cup sugar

tbsp cornstarch
2 1/2
tsp ground cinnamon, divided
1/4
tsp ground nutmeg

cup granny smith apples, peeled, sliced (about 2.5 lbs.)
1/3
cup fat free caramel sundae syrup
1/2
cup flour
1/2
cup chilled butter, cut into small pieces

cup regular oats
Directions

Preheat oven to 375 degrees F. Fit pastry into pie plate. Fold edges under, flute. Line dough with a piece of foil and arrange pie weights or dried beans on foil. Bake at 375 for 15 minutes. Remove pie weights and foil. Cool on a wire rack.

Combine sugar, cornstarch, 2 t cinnamon, salt and nutmeg in a bowl and sprinkle over apples. Toss gently. Stir in caramel. Spoon apple mixture into prepared crust. Combine 1/2 t cinnamon, flour and brown sugar in a bowl. Cut in butter with a pastry blender or two knives until mixture resembles coarse meal. Stir in oats. Sprinkle oat mixture over apple mixture.

Bake at 375 for 1 hour. Shield edges of crust with foil. Bake 1 more hour or until golden. Cool on a wire rack.
