Chewy Chocolate Gingerbread Cookies

A holiday favorite. (Adapted from Martha Stewart)

Ingredients
1
lb butter, room temp.
4
tbsp freshly grated ginger root, peeled
1
lb packed dark brown sugar
2
cups molasses
1
lb (12 oz) all-purpose flour
2
tbsp ground ginger
4
tsp ground cinnamon
1
tsp ground cloves
1
tsp ground nutmeg
3
/4 oz. cocoa powder
4
tsp baking soda
2
tbsp boiling water
28
oz semi-sweet chocolate
Directions
1.
Beat the butter with paddle for 4 minutes
2.
Add half the dry ingredients to the bowl, then the baking soda mixture, then the remaining dry ingredients, don't over mix.
3.
Stir in 28 oz. semi-sweet chocolate chopped into 1/4 inch chunks
4.
Chill dough, 2 hours or overnight
5.
Bake at 325 degrees, roll small balls chill 20 minutes, then roll in granulated sugar.
6.
Bake for 10-12 minutes until slightly cracked on top.
