Barley Minestrone Soup

Barley soup is very nice on a cold day. It is light and very tasty.

Ingredients

tbsp olive oil 1/3 cup dried barley 1 cup chopped onion
1/2
tsp sugar 1 cup carrot slices 1 bay leaf
1
cup celery slices 1 - 16oz can kidney beans, drained
6
cup beef broth (no msg) Grated Parmesan cheese 2 cloves garlic, minced
1
can (28 oz) whole tomatoes, undrained, chopped 1 cup green fresh beans

lb of ground beef browned and drained
Directions

Brown meat, drain and put aside. Heat oil in pan. Sauté onion, green beans, carrots, celery and garlic on high heat until crisp-tender. Transfer to soup pot. Add broth, tomatoes, barley, sugar, and bay leaf. After bringing to boil add kidney beans and beef, reduce heat, cover, and simmer 60 minutes. Remove bay leaf. Serve in bowls and sprinkle with parmesan cheese.
