Lemon Herb Penne Pasta With Veggies And Chicken

This recipe is great when you are feeding a lot of family members.

Ingredients
chicken breast (4) cut up/small cubes 1 lemon cut into wedges 1tsp minced garlic

tsp pepper 1/2 green pepper diced 1/2 onion diced
2
clusters of broccoli 1 1/2 cup of grated carrots (or use the matchstick ones)
1
zucchini quartered and sliced 1 summer squash quartered and sliced
fresh basil (4 or 5 leaves) fresh oregano (2 sprigs) garlic powder
olive oil 2 tbls margarine 1 box penne pasta
fresh parmesan cheese
Directions

Brown chicken in olive oil and margarine and squeeze ½ of lemon into pan. Add garlic and fresh herbs. Take chicken out set aside and drain liquid from pan. Add more olive oil and stir in veggies, pepper, and garlic powder (the amount you like). While this is cooking a bit, cook noodles until they are a little chewy. Drain noodles and put into big bowl, add chicken and veggie mix. Mix together and squeeze the rest of the lemon into mixture. Serve with fresh parmesan cheese on top.
