Involtini Di Melenzane (Eggplant Rollatini)

Ingredients
1
medium eggplant cut lengthwise in thin slices
8
oz of part skim ricotta
salt and pepper
3
tbsp olive oil
some mozzarella cheese for topping
Directions
1.
Saute eggplant slices in Large saute pan with 3 Tbs Olive oil
2.
Mix ricotta with little salt and pepper
3.
Spread ricotta mix on each eggplant slice and roll them up
4.
Serve like that or cover the rolls with slices of mozzarella and bake at 350 degrees for 8-10 minutes
