Italian Wedding Soup

Another tasty recipe to carry on the Sunday soup tradition!

Ingredients

lb Ground pork

Beaten eggs

/4 c. Breadcrumbs

tbsp Parmesan cheese
1
tsp Basil
1
tsp Garlic powder
1
/2 tsp. Salt
8
cups Chicken broth
1 1/2
cups Spinach (one frozen pack)
1
cup Orzo pasta (cooked separately)
3
/4 c. Chopped carrots
1
/2 c. Chopped onion
Directions
1.
Meatballs: Combine first seven ingredients together and roll into small meatballs. Drop into chicken broth when it's reached a rolling boil.
2.
Add the following ingredients (excluding cooked pasta) and simmer until meatballs and vegetables are cooked through.
3.
Salt, pepper and garlic powder to taste.
4.
Add pasta last, and serve with parmesan cheese.
