Louisiana Potato Mix

Been working with my red potatoes, decided to add some flavors inspired by a Louisiana Skillet I bought from Lumes. Onion can be exchanged with Red or Yellow if wanted.

Ingredients

lb red potato (3-5 based on size)
1/2
green bell pepper (diced or strip based on preference)
1/3
white onion (diced)

tbsp vegetable oil
1
jalapeno pepper (diced) [optional
thyme
cumin
parsley
salt
black pepper
Directions
1.
Warm oil in a skillet on Medium-Low Heat

Wash and cut potatoes into quarter pieces, but halve those pieces if too large. Saute potatoes in oil for fifteen minutes.
3.
Dice the peppers and onion, and add to potatoes. Add in herbs and spices, saute for 10 minutes.
