Carrot And Rice Soup

This is a great soup that I make my kids when they are sick. A little bit of home comfort.

Serves 4people
Ingredients
4
large carrots
1/4
cup chopped parsley
1
tsp finely chopped onion (optional)
1
chicken cubes (go by taste depending on your water level)
1/3
cup uncooked basmati rice
4 1/2
cups water or as needed ( don't forget to adjust the chicken cubes for flavor)
pepper to taste
1/4
tsp of Italian seasoning
Directions
1.
Chop carrots into very small cube like pieces. Add to pan along with the onion and parsley. Bring to a boil. Add the seasonings and the rice. Simmer till rice is done. Serve with crusty bread.
