Quick Chorizo And Butterbean Stew

A perfect lunch cooked in under 20 minutes. Freeze or refrigerate the leftovers for weekday lunches or quick dinners

Ingredients

tsp olive oil
200
gr chorizo, cut into pieces, skin peeled off
1
white onion, finely chopped
3
garlic cloves, crushed
400
gr tin chopped tomatoes
500
gr tinned butterbeans in water, drained
big handful of fresh flatleaf parsley, roughly chopped
crusty bread, to serve
salt and freshly ground black pepper
Directions

Heat a medium saucepan and fry the chorizo until the juices start to run.

Add the crushed garlic and diced onion to the pan and cook on medium high, stirring regularly,
3.
When the onions are soft, add the tin of chopped tomatoes and the drained butterbeans to the pan an stir in.
4.
Simmer with the saucepan lid on for 10 minutes. Add a little water if the stew is too thick.
5.
Add the handful of parsley and season with salt and pepper to taste.
6.
Serve in a bowl with a side of warm crusty bread.
