Oven Fried Chicken With Peaches And Biscuits

Here's a down-home southern meal in a pan. Try cream of broccoli soup as a started and chocolate ice cream with a splash of dark rum for dessert.

cup vegetable shortening

tbsp butter

cup plus 2 tbsp flour

tsp paprika

tsp salt

chicken (3lb), cut up
1
can (6 oz) refrigerator biscuits
1
can (30 oz) of cling peaches
clove whole
1 1/2
cups hot milk
Directions

Preheat oven to 425F.

Place butter in a 13x9x2-inch baking dish and set in oven until melted.

In a plastic bag or paper bag, combine 1 cup flour, paprika, salt, and pepper. Add chicken, a few pieces at a time and shake to coat thoroughly. Place chicken skin side down in hot shortening and bake for 45min, then turn over.

Push chicken to one end of pan. At the other end of the pan, arrange uncooked biscuits in a single layer without draining the butter. Stick each peach half with a clove and place on top of chicken. Bake 15min.

To make gravy, remove everything from pan except the drippings. Pour pan drippings into a medium sized saucepan and place over medium heat. Whisk in 2 tbsp flour and cook for 1min without browning. Whisk in milk and bring to a boil, and cook, stirring until thick and smooth. Serve with chicken and biscuits.
