London Fog Jello Cups

Anyone who knows me well knows I have a less-than-healthy obsession with Earl Grey - so no one should be surprised that I wanted to turn this delicious drink into a dessert! In this version, the Earl Grey layer is gelatinized and the vanilla heavy cream is loosely whipped prior to topping, reminiscent of the evaporated milk poured over mango pudding - feel free to experiment with using gelatin to set the vanilla heavy cream layer!

Ingredients
Tea Jello

cup + 3 tbsp Water (Separated)

Earl Grey Tea Bags
1
tbsp Non-Dairy Creamer
5
tsp Granulated Sugar
Vanilla Cream Layer
3/4
cup Heavy Whipping Cream
1
tsp Vanilla Extract
1
tbsp Confectioner's Sugar
1
packet Unflavored Gelatin Mix
Directions
Earl Grey Jello
1.
Heat 1 cup water to near boiling in a 2-cup pyrex measuring cup.
2.
Add Earl Grey tea bags and allow to steep 5 minutes, then discard tea bags.
3.
Add the granulated sugar and non-dairy creamer, stir well.
4.
In a small dish, combine 3 tbsp water and gelatin - allow to bloom for 5 minutes.
5.
Microwave the gelatin for 7 seconds, and check for granules. Repeat until no granules remain, being careful not to allow the gelatin to boil.
6.
Stir the gelatin into the tea and allow to sit at room temperature for 10 minutes.
7.
Pour into five small glass containers, allowing for at least a half inch of space between the gelatin and the lip of the glass.
8.
Chill in the refrigerator for at least two hours.
Vanilla Cream Layer
1.
When the tea gelatin is set, pour the heavy whipping cream into a small bowl. Add the Confectioner's Sugar and Vanilla Extract.
2.
Whisk until combined and no clumps of sugar remain - do not continue whisking, or you'll end up with whipped cream!
3.
Pour the heavy cream mixture over the gelatin, and return to fridge for 30 minutes.
4.
Serve with a lemon twist or as is!
