Fajitas

Ingredients

lb Flat Iron Steak sliced
1
lb Shrimp peeled/deveined
1
Green Bell Pepper sliced
2
Red Bell Peppers sliced
1
Yellow Onion Large chopped
Juice of 1 Lime
Marinade x2:
1/2
cup Extra Virgin Olive Oil
2
tbsp Lime Juice (juice of 1 lime)
1
tsp Chili Powder
1/2
tsp Salt
1
tsp Ground Cumin
6
cloves Garlic
1/2
bunch Cilantro chopped
Toppings (Optional):
Flour Tortillas
Grated Cheddar Cheese
Lettuce
Tomato
Sour Cream
Salsa
Directions
1.
Cut Flat Iron Steak into thin strips.
2.
Thaw and rinse shrimp.
3.
In a medium bowl mix together EVOO, lime juice, chili powder, salt, cumin, garlic, cilantro, and zest of lime.
4.
Repeat for second marinade.
5.
Pour marinade over steak/shrimp in bowl and let marinade in refrigerator for 4 hours up to overnight.
6.
Preheat cast iron skillet. When heated added a touch of EVOO.
7.
Add steak and cook until done then remove and set aside.
8.
Add shrimp to skillet and cook until shrimp is done then remove and set aside.
9.
Add peppers and onions and cook until tender.
10.
Add steak and shrimp to peppers and onions and mix together.
11.
Sprinkle juice of lime and serve.
