Chicken & Vegetable Stir Fry

Ingredients

Chicken Breast (sliced)
1
package Brown Rice Noodles
Extra Virgin Olive Oil
Soy Sauce

Eggs
2
cloves Garlic (sliced)
Vegetable of Choice
1
Lime (2 tbsp juice)
Salt & Pepper
Directions
1.
Pour hot water over the rice noodles and let sit for 15 minutes.
2.
Butterfly the chicken breast and gently roll the breast thin.
3.
Slice thin strips of chicken.
4.
Slice thin strips of garlic.
5.
Slice vegetables. Stir Fry is 1/3 vegetable, 1/3 protein, and 1/3 noodles.
6.
Heat wok or deep sided skillet and add a little olive oil.
7.
Place the chicken, season with salt & pepper and cook until half done.
8.
Add garlic ad continue cooking until chicken is almost done.
9.
Add vegetables and add soy sauce.
10.
When chicken and vegetables are done remove from wok and set aside.
11.
Wipe out wok and add a touch more EVOO to coat pan.
12.
Drain noodles and whisk up 2 eggs.
13.
Scamble eggs in wok and season with salt & pepper.
14.
Before eggs are done add noodles, chicken and vegtables.
15.
Stir until egg is done and place in serving dish.
16.
Squeeze the juice of 1 lime and serve.
