Bourbon Chicken

lb Chicken Breasts (cubed)

tbsp Extra Virgin Olive Oil

clove Garlic (minced)
1/4
tsp Ginger (ground)

tsp Red Pepper Flakes
1/4
cup Apple Juice
1/2
cup light Brown Sugar
1
tsp Cider Vinegar
1/2
cup Water
1/3
cup light Soy Sauce
2
cups White Rice
Directions
1.
Cut chicken breasts into 1" cubes.
2.
Add 1-2 tbsp EVOO to medium sauce pan on medium heat.
3.
Add chicken and cook through.
4.
Cook rice according to stovetop/ microwave instructions.
5.
Combine garlic, ginger, red pepper flakes, apple juice, brown sugar
6.
water and soy sauce with chicken.
7.
Cook for 20 minutes over medium low heat.
8.
Serve over rice.
