Southwestern Soup

Ingredients

lb Ground Beef
1
cup Onion (chopped)
2
cloves Garlic (minced)
2
can light Red Kidney Beans (16 oz)
1
can petite Diced Tomatoes & Jalapeños (14.5 oz)
1
can Diced Tomatoes & Mild Green Chiles ( Rotel) (14.5 oz)
1
can Beef Broth (14 oz)
1
can Black Beans (15 oz)
2
cups frozen Yellow & White Whole Kernal Corn
1
envelope Taco Seasoning Mix
1/4
tsp Salt
1/4
tsp Pepper
2
tbsp Cilantro (fresh chopped)
Directions
1.
Drain and rinse both cans of kidney beans and black beans. Do not drain tomatoes.
2.
Chop onion.
3.
Brown ground beef, onion and garlic in saucepan. Drain.
4.
Mix beef, onion, and garlic mixture in dutch oven/soup pot with kidney beans, black beans, tomatoes, broth, corn, taco seasoning, salt and pepper.
5.
Bring to boil on medium-high heat.
6.
Cover, reduce heat and simmer for 30 minutes.
7.
Stir in cilantro before serving.
