Dhivi's Chicken Briyani

Amma's Chicken briyani .. Tweaked!!

Ingredients

cups Seeraga samba Rice/ Sona masoori
500-750
gr Chicken

medium sized Onions
1
Roma Tomato
2
tsp Ginger garlic paste
2
tbsp Oil
1/4
tsp Cumin/ jeera
1/4
tsp Fennel/ Sombu
2
Bay leaves
1
Star anise
1
Marathi mokku
1
small strand mace
1
pinch of nutmeg powder( optional)
1
1x1 inch Cinnamon stick
4
clove
1
Cardamom/ Elaichi
2
tbsp Sambar powder ( Homemade)
Salt as required
To Grind :
1
cup tightly packed Mint leaves/ Pudhina
1
cup tightly packed Coriander leaves
15
cloves Garlic( medium sized)
2
inch Ginger
1
tsp Cumin/ Jeera
1
tsp Fennel/ Sombu
1
inch Cinnamon stick
4-5
Green chillies( acc. to spice level)

Marrathi mokku

tsp Peppercorn
Directions
1.
Start with soaking the rice after rinsing it 3 times.
2.
Cut the onions, tomatoes and the chicken.
3.
Grind the ingredients under 'To Grind.'
4.
Put the Oil in the pressure cooker.
5.
Once hot, add all the whole spices , sauté them for couple of minutes.
6.
Add Onions and sauté till translucent.
7.
Then add the ginger garlic paste , sauté for 2 minutes, then add tomato.
8.
Add the cut chicken , sauté for 5 minutes
9.
Then add the ground paste and sambar powder and sauté for 5 minutes.
10.
Add the required salt and a cup of water.
11.
Pressure cook it for 2 whistes.
12.
Once the pressure settles, add the rice and 2 cups of water( add the water calculating the water already in the cooker in the ratio of 1:2 rice to water) and adjust salt and spice level according to your taste.
13.
Pressure cook it for 2 whistles/ 10 min in medium heat whichever is earlier.
14.
Once pressure settles, open the cooker and mix the rice making sure not to mash it.
15.
Serve with onion raita and egg.
16.
