Amma's Kaleeral Varuval/ Goat Liver Stirfry

gms/ 1 lb Goat liver( can be substituted with Chicken Giblets)

tsp Jeera/ Cumin

tsp Sombu/ Fennel seeds

inch Cinnamon stick

medium sized Onions

Green Chillies

Red Chilli

tsp Ginger garlic paste
1/4
tsp Turmeric
1/2
tsp Sambhar powder (Amma's)
1
tbsp Ground pepper (adjust according to spice level)

tsp Garam masala
2
sprigs Curry leaves
4-5
leaves Mint leaves
Salt as required
Directions
1.
Chop the liver into small pieces and add turmeric and mix it.
2.
Rinse it with water 2 times.
3.
Take a kadai. Add oil to it.
4.
Once hot, add fennel, cumin seeds, cinnamon stick, 2 green chillies, 1 red chilli and onions.
5.
Saute till onions are translucent.
6.
Add ginger garlic paste and saute for 2 minutes.
7.
Then add, the liver, turmeric, sambhar powder, salt, curry leaves and mint leaves.
8.
Saute for 5 minutes, then add 1/2 cup of water and allow it to cook.
9.
Once the water evaporates and the liver turns dark and becomes firm in consistency, add the garam masala and the ground pepper. Saute for 2 minutes.
10.
The stirfry is ready to eat. It goes well as a side with sambhar rice, curd rice or can be had as an appetizer.
