Black Magic Cake Or Cupcakes

I can't remember where this recipe came from, but as soon as I tried it once, I knew it was a keeper. Dense and moist and full of chocolatey goodness.

Ingredients

cups sugar
1 3/4
cups flour
3/4
cup cocoa (good quality)

tsp baking soda

tsp baking powder
1
tsp salt

eggs
1
cup buttermilk
1
cup strong black coffee or 2 t powdered instant coffee, plus 1 c boiling water
1/2
cup veg oil
1
tsp vanilla extract
Directions
1.
Heat oven to 350 F. Grease and flour two 9-inch round baking pans, One 13x9 baking pan or 24 cupcake holders.
2.
Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed 2 minutes (batter will thin). Pour batter evenly into prepared pans.

Bake 30-35 minutes for round pans, 35-40 minutes for 13x9 or 20-25 minutes for cupcakes or until wooden toothpick comes out clean when inserted into centre. Cool 10 minutes, remove to cool on racks. Cool completely, then frost as desired.

**Note - to make buttermilk: use 1 T white vinegar plus milk to = 1 C
