Texas Pound Cake

This recipe is from my grandmother who tried heaps of pound cake recipes and always came back to this one. Fun tip - it's called pound cake because originally, a pound of butter was used to make it!

Ingredients

cups sugar

cups cake flour

tsp baking soda

cup buttermilk

eggs

tsp lemon extract
1/2
lb butter
1
cup icing sugar
1
lemon, juiced
Directions
1.
Separate eggs. Using mixer, beat egg whites; set aside.

Mix baking soda into buttermilk, set aside.
3.
Mix together butter and sugar, then add egg yolks and beat together.
4.
Alternately, add flour and buttermilk to the mixture. Mix well. Add lemon extract.
5.
Fold in egg whites. Pour into a greased, floured bundt pan.

Bake at 350 F for 1 hour 10 minutes.

Mix together icing sugar and lemon juice and pour over cake while cake is still very hot.20
