New Orleans Jambalaya

Still enjoying my Louisiana kick right now. Can't get enough of them green peppers and onions!

Ingredients

diced chicken breast

sliced andouille sausages
8
medium peeled shrimp

cup Rice

cups Chicken Stock
1/2
cup diced Green Bell Pepper
1/2
cup diced Onion
1/2
cup diced Celery
2/3
cup chopped Tomato
1
tsp hot sauce
2
tbsp olive oil
2
tbsp garlic
1
tsp Oregano
1
tsp Cayenne Pepper
1
tsp Dried Thyme
1
tbsp paprika
2
tsp Salt
2
tsp Garlic Salt
1
tsp Garlic Salt
Directions
1.
Combine Seasonings in a bowl.

In a large pan, on high heat, fry oil with onion, green pepper, and celery for about 3 minutes.
3.
Add in tomatoes, garlic, and hot sauce.
4.
Add in rice and slowly mix in chicken stock. Reduce to medium heat. Let cook and soak up water for 15 minutes. Stir occasionally.
5.
While rice is cooking, combine shrimp, chicken, and the 1 Tbsp. of Cajun Seasoning Mix. Work it hard.
6.
Once rice is tender, add in meats. Let simmer until meat is fully cooked, so about ten minutes.
7.
Season with salt, pepper, and rest of cajun mix.
