Mary Lou's Turkey Chili

Turkey Chili

Ingredients

tbsp olive oil

lb lean ground turkey

tbsp minced garlic

tsp salt

tsp pepper

/2 tsp ground cumin

can chicken broth
1
can black beans (rinsed)
1
box frozen corn
1/2
cup uncooked white rice
1/2
cup green salsa
1
cup chopped sweet onion
1/2
cup chopped cilantro
Directions
1.
Heat Olive Oil over high heat and add Turkey and Garlic. Cook for 3-4 minutes or until browned.
2.
Add Cumin, Salt and Pepper, stir for 30 seconds.
3.
Stir in Chicken Broth, beans, Rice, Corn, and Salsa.
4.
Bring to a boil then reduce heat. Cover and simmer, stirring occasionally, 20-25 minutes until rice is tender.
5.
Accompany with Sour Cream, Green Salsa, and Chopped Cilantro.
