Mumbai Street Style Paav Bhaji Recipie

This recipe is a amalgamation of various sources: * Mom * A few paav bhaji vendors across mumbai * some experiments and some mistakes of my own

Ingredients
For the DISH

Medium Sized Potatoes, peeled
1/2
Cauliflower
Half cup green peas
2
cups chopped (diced) Onions (preferably red)
1/4
cup chopped green pepper
2
cups chopped Tomatoes (for better taste blend)
3
green chillies, finely chopped ( + / - 2 for spice difference)

cloves garlic finely chopped
ginger, finely chopped (equal to garlic)

cup coriander, chopped
1
tsp Hing
1
tsp dry mango powder
1
tsp turmeric powder
2
tbsp jeera (cumin seeds)
oil (minimum 2 tbsp)

tbsp garam masala
2
tbsp red chilli powder ( + / - 1 tbsp for spice difference)

tbsp coriander powder
1
tbsp black pepper

tbsp paav bhaji masala (MDH or EVEREST recommended)
Table Salt (to taste)

tbsp squeezed lemon juice

tbsp butter (optional, you can ignore this to make this dish vegan)
For the side - salad

onion chopped (long strings)

tbsp lemon juice
1
tomato chopped (diced)
1/2
cur chopped coriander
For pav (8 pieces)
1/2
cup butter
1
tsp paav bhaji masala
1
pinch black pepper
1
pinch salt
Directions
For the Vegetables
1.
Take a large vessel with water
2.
Add salt and bring the water to a boil
3.
Add Potatoes, Cauliflower and peas to the boiling water
4.
Boil until all the vegetables are tender and then turn off the heat
For the Masala
1.
Take a wok kind of a vessel and heat oil
2.
Add Hing, then cumin seeds and stir until seeds crackle
3.
Add green chillies, then ginger, stir twice and add garlic
4.
Fry them until garlic turns slightly off-white (light golden)
5.
Add onions and mix well
6.
Stir for 1 minute and add the green peppers
7.
Stir until onions become transparent and add all remaining spices
8.
Stir for 1-2 minutes until the fragrance of the spices fill up the room and then add chopped tomatoes
9.
Add salt to taste
10.
alternate between stirring & covering and cooking until tomatoes are cooked (they will start leaving oil)
For the main dish (continue from Masala section)
1.
Add The boiled vegetable little at a time and using a masher, mash it up (do not throw away the water)
2.
Once all vegetables are mashed and the dish looks like a paste, slowly keep adding the water in which the vegetables were boiled
3.
Make the dish a little more watery than you desire the final product to be
4.
OPTIONAL - add butter and stir
5.
Reduce the heat to low and let the dish simmer until desired consistency is reached ( this process will make the dish creamier because of starch released from the potatoes)
6.
Add chopped coriander on top, turn off the heat and cover for one minute

Mix butter and masala
3.
Use this butter and masala to heat the paav on a tawa (1/2 heat)
4.
Toast as much as you prefer
Side Salad
1.
Mix all the ingredients in a bowl and set aside for 5 mins
2.
Add chopped coriander on top and serve
