Halloumi With Lentils Salad

I think I picked this out of a Coles Catalog...the point is that I liked it and kept it. The lentils make the salad feel really hearty.

Ingredients

x 400g lentils, drained and rinsed
1
small red onion, sliced thinly
1
cucumber, halved and sliced very thinly
2
tomatoes, chopped
1/2
cup mint leaves, shredded
1 1/2
lemon juice
1
tbsp olive oil
250
halloumi cheese, sliced
2
tbsp olive oil
jalapeños to taste
Directions
1.
Combine lentils, onion, cucumber, tomatoes, jalapeños, mint, lemon juice and oil in a bowl, season and toss to combine.
2.
In a hot, non-stick fry pan cook halloumi in oil for 1 min. on each side until golden. Drain halloumi on paper towel, then top lentil salad with warm halloumi to serve. Season to taste with S&P.
