Hot Garlic Indian Style Fried Rice

Enjoy Spicy, Garlicy, Fragrant, Indian Style Fried Rice.

Ingredients

cups Rice
3
tbsp oil
2
cups diced onions
3
green chillies ( + / - 1 for spice) (minced)
8
cloves of garlic (minced)
2
dried red chillies ( if using Rajasthani, up the number to 3) (broken to pieces by hand)

tbsp haldi
2
tsp black pepper ( if you like it hot add 1 tbsp)
1
tbsp cumin seeds (jeera)
1
pinch hing
1/2
cup chopped cilantro
2
tbsp kitchen king masala (if you have)
Lemon Slices (garnish)
Replacement Of 2 tbsp Kitchen King Masala

tsp coriander powder
1
tsp garam masala
1
tsp cumin powder
Directions
Rice Parboil
1.
take a vessel and add water
2.
bring the water to boil
3.
add a pinch of salt and haldi to the boiling water
4.
add one tbsp oil
5.
Add washed rice to the boiling water
6.
parboiling should take approximately 8 minutes
7.
taste the rice, should be minutely undercooked
Main Masala
1.
take a pan and heat oil
2.
when oil is hot, add hing
3.
add cumin seeds (wait 30 seconds for them to roast)
4.
add minced chillies
5.
add dried red chilly
6.
wait 10 seconds for the flavour to release
7.
add minced garlic and wait 20 seconds
8.
add diced onions and roast till the onions turn pink
9.
add haldi and kitchen king massala
10.
wait 30 seconds, the dish should now be aromatic
11.
add 3/4th of parboiled rice and mix well
12.
add the remaining rice on top
13.
lower the flame and cover the vessel
14.
serve with slices of lemon / lime
