Amber's Anzac Biscuits

My dear baking friend, Amber gave me this recipe on our first ANZAC day in Australia. It's still my favourite, as the cookies come out soft and chewy the way I like them, not crunchy.

Ingredients

butter

tbsp golden syrup

tbsp water
1/2
tsp baking soda
1
cup firmly packed brown sugar
1/2
cup desiccated coconut
1
cup rolled oats
1
cup flour
Directions
1.
Preheat oven to 160 C. Line oven trays with baking paper.
2.
Stir butter, syrup and water in large sauce pan over low heat until smooth. Remove from heat and stir in soda, then remaining ingredients.
3.
Roll tablespoons of mix into balls and place about 2-in. apart on trays and flatten slightly.
4.
Bake about 20 minutes, cool on tray.
5.
*Note - biscuits should still be soft when cooked.
