Blue Cheese & Rosemary Potatoes

Ingredients

lb russet potatoes

tsp salt

tsp black pepper
1 1/2
tsp minced fresh rosemary

cup crumbled blue cheese
3/4
cup grated Parmesan cheese

cup sour cream
2
cups cream (this is not a time to go light, use the heavy cream!)

Directions
1.
Preheat oven to 350 degrees.
2.
Butter 9x13 baking dish.
3.
Toss sliced potatoes with 2 tsp salt, pepper and rosemary.
4.
Toss cheeses together.
5.
Layer half the potatoes in the dish and sprinkle with half the cheese then top with remaining potatoes.
6.
Whisk together sour cream, cream and 1 tsp salt.
7.
Pour cream mixture over potatoes.
8.
Tap dish on counter to settle ingredients and pop any air bubbles.
9.
Top with remaining cheese.
10.
Bake for one hour and fifteen minutes or until browned and tender.
